- 1 cup Hellmann's Real Mayonnaise
- 1/4 cup lemon juice
- 1 teaspoon caster sugar
- 3 teaspoon American mild mustard
- 2 cups finely shredded red cabbage
- 2 cups finely shredded green cabbage
- 1 cup finely shredded carrot
- 1 small red capsicum, deseeded, thinly sliced
- 1 small green capsicum, deseeded, thinly sliced
- 3 spring onions, thinly sliced
- snipped chives, to garnish
- toasted pepita seeds, to garnish
Combine mayonnaise, lemon juice, sugar and mustard in a large bowl.
Add cabbage, carrot, green and red capsicum and spring onions. Season with salt and pepper.
Serve coleslaw topped with snipped chives and toasted pepitas
