Kale Salad

This easy kale salad makes a great side for lunch or dinner.

  • 3 tablespoons balsamic vinegar
  • 1 tablespoon white wine vinegar
  • 1 tablespoon honey
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons Hellmann's Real Mayonnaise
  • 2 bunches kale
  • 30 g Parmesan cheese shavings
  • 1 tablespoon pine nuts, lightly toasted

  1. Combine the balsamic vinegar, wine vinegar, honey, olive oil and Hellmann’s Real Mayonnaise in a bowl and whisk well until evenly mixed.

  2. Remove and discard stems and centre veins from kale. Thinly shred leaves then place into in a large bowl. Add the dressing and toss well.

  3. Sprinkle with parmesan and pine nuts. Serve.
