Glazed pork satay skewers

These glazed pork satay skewers are perfect for impressing your guests at a BBQ. They’re a perfect combination of savoury and sweet and a little chilli kick will have everyone coming back for seconds!

  • 2 1/2 tablespoons reduced-sodium soy sauce or fish sauce
  • 2 tablespoons oil
  • 1 tablespoon red curry paste
  • 600 g pork fillet, diced
  • 150 ml reduced-fat coconut milk
  • 1 tablespoon honey
  • 1 tablespoon peanut butter
  • 2 tablespoons Hellmann's Real Mayonnaise
  • 1 lime, juiced, plus extra limes to serve

  1. Combine 2 tablespoons soy sauce, 2 teaspoons red curry paste and oil in a bowl, add pork toss to coat. Cover and marinate in the fridge for 1-2 hours.

  2. In a small saucepan, add coconut milk and and remaining 2 teaspoons curry paste and cook, over medium heat, stirring regularly until heated through. Stir in honey, peanut butter and remaining 2 teaspoons soy sauce. Remove from the heat and set aside to cool. Add the mayonnaise and lime juice, mix until combined.

  3. Thread the pork onto 8 medium sized metal skewers (or alternatively use pre-soaked wooden skewers).

  4. Preheat a BBQ over medium high heat. Cook pork skewers for 3-4 minutes on each side or until just cooked through.

  5. Brush the pork with a little of the satay sauce and cook for a further 30 seconds on each side, or until the sauce starts to caramelise. Serve with remaining satay sauce and lime wedges.

  6. Swap pork fillet for skinless chicken thigh fillets.
