Ingredients
- 2 1/2 tablespoons reduced-sodium soy sauce or fish sauce
- 2 tablespoons oil
- 1 tablespoon red curry paste
- 600 g pork fillet, diced
- 150 ml reduced-fat coconut milk
- 1 tablespoon honey
- 1 tablespoon peanut butter
- 2 tablespoons Hellmann's Real Mayonnaise
- 1 lime, juiced, plus extra limes to serve

Combine 2 tablespoons soy sauce, 2 teaspoons red curry paste and oil in a bowl, add pork toss to coat. Cover and marinate in the fridge for 1-2 hours.

In a small saucepan, add coconut milk and and remaining 2 teaspoons curry paste and cook, over medium heat, stirring regularly until heated through. Stir in honey, peanut butter and remaining 2 teaspoons soy sauce. Remove from the heat and set aside to cool. Add the mayonnaise and lime juice, mix until combined.

Thread the pork onto 8 medium sized metal skewers (or alternatively use pre-soaked wooden skewers).

Preheat a BBQ over medium high heat. Cook pork skewers for 3-4 minutes on each side or until just cooked through.

Brush the pork with a little of the satay sauce and cook for a further 30 seconds on each side, or until the sauce starts to caramelise. Serve with remaining satay sauce and lime wedges.

Swap pork fillet for skinless chicken thigh fillets.
