Baby new potatoes tossed in a scrumptious dressing made with Hellmann's mayonnaise, yogurt and curry spices.

  • 500 g new potatoes
  • 4 tablespoon Hellmann's Real Mayonnaise
  • 4 tablespoons low-fat natural yogurt
  • 1 tablespoon mild curry powder
  • 1 tablespoon mango chutney
  • 1 lemon, zested and juiced
  • 1 ripe mango, diced
  • freshly ground pepper, to taste
  • 1 bunch of spring onions, sliced
  • Small handful, fresh coriander, chopped
  • mint leaves, chopped (just a few)

  1. Place the potatoes in a saucepan of cold water and bring to the boil. Cook for 15-20 minutes or until just tender. Drain and set aside to cool slightly.

  2. In a large bowl combine mayonnaise, yogurt, curry powder, lemon zest and juice and chutney. Fold through mango. Season to taste with pepper.

  3. Add cooked potatoes, spring onions, coriander and mint to the mayonnaise mixture, toss to coat. Serve.
