Boxing Day Club Sandwich

This sandwich is a festive feast using Christmas day leftovers & the perfect way to make sure nothing goes to waste.

  • 1/2 cup Brussels sprouts, shredded
  • 1 tablespoons olive oil
  • 1 teaspoon wholegrain mustard
  • 3 slices farmhouse bread, lightly toasted
  • 2 tablespoons Hellmann's Real Mayonnaise
  • 2 tablespoons prepared gravy
  • 15 g sautéed red cabbage
  • 3 pigs in blankets
  • 1 tablespoon cranberry sauce
  • 3 slices roasted turkey breast
  • 2 tablespoons stuffing


  1. In a bowl, combine the shredded sprouts, olive oil, wholegrain mustard and season to taste.

  2. Spread two of the toasted bread slices with mayonnaise. Take the third slice of toasted bread and lightly soak it in gravy.

  3. Build the sandwich by placing one of the mayonnaise spread toast slices on a bread broad. Top with red cabbage, pigs-in-blankets and cranberry sauce. Top with gravy-soaked toasted bread and then top with Brussel sprout mixture, turkey, stuffing and the remaining piece of mayonnaise spread toast.
