Burger Sauce

  • 1 cup Hellmann's Real Mayonnaise
  • 1/4 cup finely chopped dill sprigs
  • 1/2 tsp chipotle sauce
  • 1 -2 tablespoon lemon juice, to taste
  • 1 tsp salt
  • pinch cracked black pepper

Burger

  • 700 g beef mince
  • 12 cheese slices
  • 6 brioche buns
  • 1 tomato, sliced
  • 1/2 cup bread and butter pickles or dill cucumbers drained
  • 1/2 white onion, thinly sliced
  • 6 butter lettuce leaves

  1. To make the burger sauce; dollop the thick and creamy mayonnaise into a medium sized bowl, add the remaining ingredients and mix well to combine. This sauce can be made ahead of time and stored in the fridge (old majo jars are great for this!).

  2. To make the burgers, gently shape the mince into six even patties using wet hands. Be gentle and do not over work the meat. Place shaped patties on a large baking tray lined with non-stick baking paper. Cover with kitchen plastic wrap, and place in the fridge to chill for at least 30 mins to firm up.

  3. Pre-heat a BBQ flat plate, or large heavy based non-stick frying pan, to medium-high heat. Season patties well on both sides with salt and pepper. Cook patties for 4-5 minutes on on side. Flip over and place cheese to the top. Finish cooking until medium rare (or to your liking) and cheese has slightly melted.

  4. To assemble your burger, spread the insides of both top and base bun with the moorish and oozy special Hellmann’s burger sauce, followed by the cheesy beef patty and the topped with sliced white onion, pickles, tomato slices or lettuce.
