Chicken & Mediterranean Vegetable Skewers
A creamy lemon and mint marinade gives these chicken kebabs loads of flavour.

Ingredients
- 1/4 cup chopped fresh mint leaves or coriander leaves
- 2 tablespoons Hellmann's Real Mayonnaise
- 2 garlic cloves, crushed
- 1 lemon, zested and juiced
- 1 long red chilli, seeded, finely chopped
- 1/4 teaspoon freshly ground black pepper
- 2 skinless chicken breast fillets (about 125g each), cut into 3 cm pieces
- 1 yellow capsicum, cut into 2 cm pieces
- 1 zucchini, sliced
- oil spray, for greasing

Combine mayonnaise, mint, garlic, lemon zest and juice, chilli and black pepper in a medium bowl. Add chicken; toss to coat. Cover and marinate in refrigerator for at least 1 hour and up to 3 hours.

Preheat barbecue to medium heat. Remove chicken from marinade. Alternately thread chicken, yellow capsicum and zucchini onto soaked wooden skewers. Spray with oil spray.

Cook kebabs for 10 to 15 minutes, turning frequently, or until chicken is cooked through.
Chef's Tip
The mayonnaise marinade is also great for up to 2 whole chicken breasts or 4 chicken thigh fillets. Also works well with pork and seafood.
