  • 1/2 store-bought rostisserie barbecued chicken
  • 3/4 cup Hellmann's Real Mayonnaise, plus extra for spreading
  • 3 tsp lemon juice
  • 1 tsp Dijon mustard
  • 1/3 cup finely chopped celery
  • 2 tbsp finely chopped chives
  • sea salt and freshly ground black pepper, to taste
  • 3 cups baby rocket leaves, or other salad greens
  • 8 slices multigrain bread
  • 1/3 cup store-bought drained pickled red onion

  1. Remove skin and bones from chicken, and discard. Roughly chop or shred chicken meat.

  2. Place mayonnaise, lemon juice and mustard into large bowl. Stir until well combined. Add chicken, celery and chives, mix well. Season to taste with salt and pepper.

  3. Spread 4 slices of bread with a little extra mayonnaise. Top with rocket, chicken mixture, red onions and remaining bread. Serve.
