A deliciously easy Mediterranean-inspired chicken marinade with a burst of lemon, oregano and garlic. Perfect for summer barbecues or an easy mid-week dinner.

  • 1 cup Hellmann's Real Mayonnaise
  • 4 tbsp fresh lemon juice
  • 1 tbsp dried oregano leaves
  • 1 tbsp garlic powder
  • sea salt and freshly ground black pepper, to taste
  • 1 kg skinless chicken thigh fillets, cut in half
  • chopped fresh continental parsley, to garnish
  • Lemon cheeks, to serve

Lemon Garlic Dipping Sauce

  • 1/2 cup Hellmann's Real Mayonnaise
  • 1 1/2 tbsp fresh lemon juice
  • 1 tsp garlic powder
  • sea salt and freshly ground black pepper, to taste

  1. Make Chicken: Combine mayonnaise, lemon juice, garlic and oregano in a bowl. Season to taste with salt and pepper. Add chicken, toss to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight.

  2. Meanwhile make dipping sauce: Combine mayonnaise, lemon juice and garlic powder in a small bowl. Season to taste with salt and pepper. Cover and set aside in the fridge until ready to serve.

  3. Preheat barbecue plate to medium high heat. Remove chicken from marinade. Thread onto 12 x 25cm metal, or soaked bamboo, skewers. Cook for 10 minutes, turning regularly, or until chicken is golden brown and cooked through. Transfer to a serving plate. Garnish with parsley and serve with lemon garlic dipping sauce and lemon cheeks.
