  • 1/3 cup Hellmann's Real Mayonnaise, plus extra to serve
  • 1/4 cup store-bought basil pesto
  • 2 tsp lemon juice
  • 900 g skinless chicken thigh fillets
  • lemon wedges, or chargrilled lemon cheeks, to serve

  1. Combine mayonnaise, pesto and lemon juice in a large non-reactive bowl. Add chicken to the mayonnaise mixture. Toss to coat thoroughly. For increased depth of flavour, cover and marinate in the fridge for 3 hours, or overnight.

  2. Heat a large non-stick frying pan, or stovetop grill pan, over medium- high heat. Cook chicken 8-10 minutes, turning regularly, or until golden brown and cooked through. Serve chicken drizzled with extra pesto and lemon wedges.
