- 2 teaspoons finely chopped fresh parsley leaves
- 2 teaspoons lime juice
- 1/2 teaspoon hot pepper sauce (like Tabasco)
- 1/4 teaspoon finely grated lime zest
- 400 g cooked prawns, peeled
- 1 ripe avocado, sliced
- 1/2 stick celery, thinly sliced
- 8 slices crusty white bread

Combine mayonnaise, parsley, lime juice, hot pepper sauce and lime zest in a medium bowl. Add prawns, avocado and celery; toss to coat.
