Salmon skewers with delicious dipping sauce based on Hellmann's mayonnaise with a zing of lemon.

  • 4 salmon fillets, cut into 3 cm pieces
  • 1 lemon, halved, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper
  • 1/3 cup Hellmann's Real Mayonnaise
  • 2 tablespoon low-fat natural yogurt
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons finely grated fresh lemon zest
  • 1/2 yellow capsicum, seeded, finely diced
  • 3 spring onions, sliced
  • 1 tablespoon parsley

  1. Thread the salmon and lemon onto pre-soaked wooden skewers. Brush with olive oil and season with black pepper.

  2. To make the dipping sauce combine mix together the mayonnaise, yoghurt, lemon juice and zest. Stir through capsicum, spring onions and parsley. Season to taste with salt and pepper and set aside.

  3. Cook the salmon skewers on a preheated BBQ over medium high heat for few minutes, turning regularly, or until cooked through.
