This Chicken Salad is super easy to make using a supermarket roast chicken and all bound together in a creamy lemon & garlic dressing.

  • 1 unstuffed store-bought roast chicken
  • 3 tablespoons Hellmann's Real Mayonnaise
  • 1 lemon, juiced
  • 2 garlic cloves, crushed
  • 3 rashers streaky bacon, cooked, roughly chopped
  • 12 cherry tomatoes, halved
  • 4 spring onions, thinly sliced
  • 1 stick celery, finely chopped
  • 1 tablespoon chopped flat leaf parsley
  • 1 tablespoon chopped mint
  • 2 baby gem lettuces, leaves separated
  • 1 tablespoon toasted pine nuts

  1. Remove skin and meat from chicken. Discard bones. Roughly shred meat and skin.

  2. In a large bowl combine Hellmann's Real Mayonnaise, lemon juice and garlic.

  3. Add chicken, bacon, cherry tomatoes, spring onions, celery, parsley and mint, toss to coat.

  4. Arrange lettuce leaves onto a serving platter. Top with chicken salad mixture. Garnish with pine nuts.
