- 2 onions, halved and thinly sliced
- 40 g butter
- 3/4 cup Hellmann's Real Mayonnaise
- 1/3 cup honey
- 1/4 cup whole grain mustard
- 720 g 15% fat beef mince
- 300 g brie, sliced
- 4 brioche burger buns

First job you will need to cook your onions. Melt butter in a large frying pan over medium heat. Add onions and cook, stirring regularly for 10 -15 minutes until soft and golden. Stir in honey, season to taste. Transfer to a bowl. Cover to keep warm.

Combine mayonnaise and mustard in a bowl and set aside.

Weight mince into 4 x 180g balls. Form into patties. Season each side with salt and pepper. Heat a large frying pan or chargrill pan over high heat. Spray patties with oil. Place into hot pan and flatten slightly with a spatula, or egg flip, until the width of your finger. Cook for 4 minutes each side or until browned and just cooked through. Transfer to a plate.

Place buns, cut side down into pan and cook until toasted.

Then it’s time to build the burger. Start with spreading the mustard mayonnaise on the bun bases and bun tops. Place a burger pattie onto bun base. Top with sliced brie. Melt gently with a blow torch if you have one, or use your oven- grill. Then top with the sauteed onions, some more mustard mayonnaise and then bun top.
